So when my wife and I split up before we were officially divorced I gave her my pistol which is legal under the spouse transfers.

Now since we are officially divorced, should we do an actual transfer?

IANAL, but legally you are still married, so I would say yes. My ex-wife stayed on my workplace health insurance for more than a year while we were separated. And had different addresses.
