Re: How much ammo should you have....
No local police, just a TWP constable and PSP.
Well it's not unrealistic. Just have to use proper money management. I'm close to reaching 2 of my caliber thresholds of 10,000 rds.
As I said in my OP, I'll use surplus supplies as "currency" when the paper money becomes useless, to buy other provisions when needed.
As far as moving it if the time comes to move it, I'll worry about that when it comes. But I have a few close friends that have said they would try to make it to my place for a SHTF event, if they make it and we do need to relocate loading it into my 1 ton diesel four wheel drive pick up should get us to another location.
This is where I started my thought process, after Sandy Hook and some of the other mass shootings.
I have per round prices for the 8 different calibers I use, that I'm comfortable with paying at the time I'm buying. As I said earlier I manage my funds accordingly, for example I won't go out to eat as often when I'm buying ammo.
At this point and time, I do have about 3 to 4 yrs worth at current usage for some of the calibers I use.

More, much more. I want my floors to make odd noises when I set the ammo cans down.

Re: How much ammo should you have....
See on the currency thing, and not saying one can't share. But if it's the zombie apocalypse and I'm meeting someone in the mall parking lot to trade/barter, and I'm trading them ammo, which means likely they have tools already, what's stopping them from just jumping me and taking my stash or hitting me in the bast afterwards? IMO the ammo as a barter thing might be a bit over inflated.

As much as you can sensibly afford.
