Re: Shelf stable vices
As somebody who recently opened 5 bottles of red wine to get one drinkable bottle, this is spot on. Most of the bottles i opened were 2010-2012 vintage. Fortunately, they were also all free. 3 were possibly drinkable if i really really needed to drink bad wine. 1 was out and out bad. 5th bottle was not exciting, but it wasn't all that great when it went into the bottle.

Re: Shelf stable vices
Wine snobs are obsessed with aging wines to improve them. Unfortunately it has also been said that more wines have been ruined by aging than are improved by aging.
So unless you have an expensive bottle from a wine type known for long aging drink it in a few years and enjoy it.

For myself, Straight grain alcohol, EverClear or the like.
As for cooking wines...If I wouldn't Drink it Straight, I wouldn't cook with it.
For trade...any pisswasser will be fine. Our brethren are already in the Field, why stand we here Idle?
