Don't be freaked out by the guts still "working" for a while after the critter is killed. Unless you plan on a head mount with horns, head shot is the way to go.

Rabbits used to carry a disease called tularemia that could be transferred to dogs. Even the Game Commission warned about feeding your dogs the liver years ago. That part I remember, not sure about the other organs.
