Revoking someone's LTCF for OC certainly defies all logic, in my opinion... It's like saying, "hey, I don't like you OCing, so I'll make it so you can only OC!"

Not much more to add except that I would insist that I be confronted with my accuser. Then, sue him or her for harrassment, if that is an option. I'm sorry to hear about this SFN. Does the sheriff know who he is messing with?

My late maternal grandfather used to say that he (or she) who fights and runs away lives to fight again. I think that applies here.
My personal recommendation would be to meet with the sheriff, preferably with a firearms-savvy attorney (like GunLawyer) and politely state your position through the attorney. I'm not talking any mention of a law suit, just let the atty be your mouthpiece. IMO, the sheriff won't be expecting an atty, he's going to rely on his intimidation factor and your desire to continue carrying to simply get you to cover up.
I'd not meet with or speak with the sheriff UNTIL you find the right atty, perhaps a local one that might be willing to take advice/direction from GunLawyer. In order to get your ducks in a row for that meeting, IMO it is in your best interest to limit your communication with the sheriff to simply affirming your compliance with his request to conceal until such time that you and your atty can make an appointment to meet with him and state your position, along with presenting the pertinent legal backup such as Ortiz and other decisions.
The sheriff will likely not reveal who complained, despite the theoretical right you have to face your accuser. By temporarily agreeing to conceal and doing so at the next few soccer games, pay attention to who gloats, or actually comments on your lack of OC. There's your snitch.
Revenge is a dish best served cold. For now, just say "Yes, Sir, three bags full," find an atty, get your ducks in a row, and have the meeting and state your position. The sheriff has all the hammers here, and IMO keeping your LTCF is MUCH easier and less expensive then trying to get it reinstated through the court. Take your time, and have the last laugh.
Don't forget, not every LEO can know all laws and regs. It's impossible. Many times they go on what they think is law or "right" because being in a position of authority for any length of time tends to erode one's ability to say, "I don't know, let me check on that and get back to you." Example: The former sheriff here wouldn't sign an ATFE Form 4 for me to purchase an SMG, claiming that I "needed to be an FFL in order to own an MG in PA." He told me to get my FFL, then come back and see him, or just buy one of those how-to books on full auto conversions in the back of gun mags and build my own MG. No schit, the former sheriff told me to commit a felony and build an MG. I went upstairs and had the DA sign my Form 4, as we know each other personally, and shame on me for not seeing the DA first.
