For local rides I pull any garments over the seat belt so I can still access my weapon albeit not super easily, because I don't want to be holstering and unholstering multiple times a day and especially not in crowded parking lots. Too much risk on several counts.

For longer rides I unholster and put the firearm in an Uncle Mikes holster that has a retainer strap and use the belt hook to hook it on the small pocket/holder down by my shin (similar to the pockets on most doors, but it's on the right side of the footwell). This way it is easily accessible. I usually want the firearm more accessible for longer rides because I usually have no idea of the area or what I might run into.

What????? No AR-15 mounted between you and front seat passenger?

I'd love to carry my SBR like that, but I suspect it would raise eyebrows.
With great power comes great responsibility....

Both our cars have pretty deep buckets, so IWB can be a bit uncomfortable. If I'm carrying the compact (80% of the time), I can just rotate the holster forward on my belt an inch or two, and it usually does the trick. Not so much the 1911 though. But for short hops, I just deal with it.

Longer drives, it goes in the driver's door pocket. I'm a lefty, so it's right there at my strong side. I put the whole rig right in the pocket, and it fits nice and snug, without shifting around. I can even draw from there if I had to. For me, this works very nicely, as the pistol never comes out of the holster when transferring back and forth from hip to door. Helps to minimize the chance of an ND.
