I was watching this series by this english chap that does the whole medieval knight in armor gig. Pretty cool series on bube tube. Anyway he has horses that he trains for the jousts. He starts them out with simple strange encounters, like a mannequin in armor just standing there and works it up to where he's smacking the mannequin with a sword. Then the horse gets used to walking on the mannequin without freaking out.
The reason I bring this up is I see where you could desensitize a horse gradually, to accept gunfire in close proximity to their heads
