Sweet potato crusted Tilapia with Cilantro Lime sauce and a side of Glock
I thought this recipe was a little odd sounding.
I have to say the flavors really compliment each other.
The sides were a Southwest pasta salad and Garden fresh tomatoes grilled with fresh basil and mozzarella.
Served with a White Zinfandel.

Looks good not a sweet potatoe kinda guy buy those tomatoes look killer!

I've used the Utz Smokey Sweets on chicken before as a breading and deep fried. Mmmm

Do it in the oven for a lower fat option. To be honest, the fryer kinda threw off the flavor, didnt really retain it. They were good and crunchy but, I think frying'em, some flavor was lost in the oil. I bet it'd actually be better in the oven.
You make that Peanut Butter Pie yet?

So... Spanish main, Italian and Southwest sides? Eclectic, but kudos for cooking outside the box. I absolutely hate ticrapia... I could see this on some halibut, though. Try the tomato with queso fresco and green onion (instead of basil).
Maybe a little red pepper flake in the crust...The last thing I want to do is hurt you... but believe me, it's on the damned list.
