Saiga 12 question
Can somebody explain the difference between a Saiga12 and a converted saiga?

"Conversion" is kinda generic term, but basically it is to move the trigger group forward, replace enough foreign parts to make the gun legal for a magazine larger than 5rnds and add a pistol grip.
Other "parts" are handguards, buttstocks, sights, chokes, breaks, magwells, etc.The resident Saiga snob

Generally speaking, unconverted means the gun is in import-legal configuration, without "assault weapon" features such as hi cap mag, pistol grip, flash hider, etc.
Many of these guns are subsequently converted to military configuration, either by importers or individuals. The catch is that the conversion must contain a specified minimum number of US-made parts to be legal (look up "922R compliance" for more details).
