What paperwork do I need to fill out when selling a gun to a gun store.

None is required by law.
They will need your information for their bound book, name, address and ID number. Some places like Gander Mtn have a paper you sign, but that is going to depend on the stores policy.
You can ask the shop for a receipt if for some reason it makes you feel better, however they are not legally obligated to give one as far as I know.
I had people request that I paid them by check when I was a dealer and put the serial # in the memo, I assume they made a copy of the check before cashing it for their records.
I am no longer a dealer and keep a small note book in my safe to record my purchases and sales.
