    Default GREEN FUNGUS ON DEER CARCUS

    we have a walk in box (fridge) set to 38 degrees, it measures about 5' deep x 7' wide, we stuff about 10 or so deer in it. lately there has been a greeish black mold or fungus growing on the inner cavity of most of the deer, after almost 30 days. is that normal or is there not enough air circulation because the deer are touching each other (side by side)?

    kind of the same thing I was wondering... why would you wait that long to butcher and freeze them?
    The first vehicles normally on the scene of a crime are ambulances and police cruisers. If you are armed you have a chance to decide who gets transported in which vehicle, if you are not armed then that decision is made for you.

    I'm extremly surprised it took 30 days! It wasn't frozen, just cold how do you keep meet good for 30 days?

    aging.... you can age meat up to and beyond 45 days. usually they only get air dried so you only have to cut out the dry parts (tender loins). everything else is still covered with the skin and fur. i dont know where the fungus is coming from, it is only on the surface, about a 16th of an inch or so has to be removed to get to good meat.

    Sorry, was thinking a dead carcass outside.

    Fungus and mold in a freezer.. It happens..

    Do you want to take a stab at how prime rib is aged? Not many folks will eat it after seeing what is done to it.

    Seriously though, god knows whats in the ecosystem right where that animal dropped. Scavengers, wind, birds, insects and such can be bringing it in from all sorts of places.
    they are in an enclosed temperature controlled environment. thats what is baffling me, maybe there are two many at one time in the box?
