you have a bunch of options in that price range: Rock Island Armory/Citadel (both made by Armscor), Para Ordnance GI Expert, Taurus PT1911 (i own and carry this one; great gun), and the STI Spartan. don't be afraid to look at used 1911s, either. you can get a Colt, Springfield Armory, Para Ordnance, or Kimbers in your price range.
i can't help you out with shops; i don't know your area. but if you want something bad enough, a litte travel wouldn't hurt. i f i thought i could find a gun i wanted for the price i wanted, i'd be willing to drive an hour.
I am aware of whats out there, and have no problem driving, just looking for any ideas on shops with a good selection. Grice's is having a sale next weekend and has a Kimber for 659, Buds has a ltwt Bi-tone for 744. I'm just looking for shops in the area with a good selection of 1911's, I have no problem driving a few hours for a shop with a good selection, and decent prices
Check the Guns Show Section. I had a friend pick up a Kimber Ultra Carrry at a very good price at a show. Are you looking for full size? I have seen a couple compact 1911's in the for sale section.

seen the post I'm not 100% sold on a double stack, but may take a look at it
Saw a gold cup while I was at this shop today. I did not look at the price. Paying on something else.

Go to a shop and pick up a para ordance (P12 or P14). I wa actaully looking at gettting a P12 until i found a great deal on My Kimber. I like the feeling of a double stack and you can't beat the extra rounds. All depends on your hand size, i don't have giant meat hooks but found the double stack grip not to big.
i am a short fat guy, the para's are too big for my hands, I was friends with a freelance gunwriter while he lived in the area, and he worked with the United Arab Emirates as a consultant in building a gun for their royal guard, it was an STI, and it was the only double stack 1911 I ever shot that fit my hand
