I think this is legal...
Friend doesn't have a LTCF but I do. He loans his 1911 to me and we drive to Wal-Mart. Once we get to our destination, I give him his 1911 and he open carries it in the store. When we're done shopping, he loans his 1911 back to me during the car ride home. Once we get back to his house, I give him back his firearm and he goes on his merry way.
Legal or not?

As far as I know, yes. That is a loophole. However, "loaning" would mean that it's in your possession and inaccessible to him. I.E., in the trunk. So don't think you can stick it between the seats and claim that he loaned it to you.

I would think as long as the gun is on your person, it is in your possession and all would be fine in the car. IANAL (nor do I play one on radio, TV or internet streaming video)
Besides, what's a cop gonna do...take your gun and run it through some sort of magical database and see who the owner is? /sarcasm

wouldn't it just be easier for your friend to apply for his LTFC?

Legality aside (it would appear possible to do legally), there is the issue of passing a loaded gun back-and-forth at both ends of this trip.... twice....
This includes the safety issue between the two of you passing the loaded firearm back and forth (at home and at the store) as well as the public perception created when one guy passes another guy a pistol just before entering a public venue where alot of cash is handled....
I'm not going to rant against this..... OC is legal.... it would seem transport could be legal.... but take into account these issues before choosing to do this 'favor' for your friend....
If you have any questions about the general feelings of board members regarding (unnecessary) handling of loaded guns in public, a quick search will provide many days of reading for you....

Legal, technically. Tell that to the LEO that confiscates the gun though. Of course they'll return it once they determine that you're right, it is legal... unless they lose it...
Just because 'perfect' is impossible does not mean we should settle for 'broken'.
