I've been going down to AC the last couple summers. Use common sense, keep your situation awareness up, and if you can buy some pepper spray while you're in new jersey. Don't buy it in PA and bring it to NJ, it will probably be illegal.

Any way I can carry concealed in Jersey? Is it difficult to get a non-resident carry permit?

I go to Atlantic City pretty often, and when I'm there I tend to be carrying a lot of cash. AC not being near the top of the "most beautiful cities" list, I would really like to be able to protect myself.

Any helpful thoughts?

Carrying cash for a job could help you get a carry permit, but carrying cash just to gamble probably won't work. Pepper spray is about the only option. NJ is anti self defense.
