    The first vehicles normally on the scene of a crime are ambulances and police cruisers. If you are armed you have a chance to decide who gets transported in which vehicle, if you are not armed then that decision is made for you.

    IIRC I mix 2lb pork fat to 8lb of venison.

    Try mixing ground bacon in with some ground venison too.

    Mmmmm bacon venison burger.

    When you guys say "pork" added, you mean pork fat, right? Not simple pork meat? I've never processed venison.

    Although pork meat is common, but IMO it's the fat you want, plus it usually free or nearly free.

    Like was said somewhere above, depending on what you are making.

    Sausage gets more pork. I use cheap beef for burger....how many of you really eat pork burgers??

    I'm using pork this time around... I'll try pork fat next time and see which I like better :P

    My neighbor uses a sharp filet knife. He slides the point under the silverskin & lays his palm on top and slides the knife across removing the silverskin and repeats for the other side. Then he squares up the ends and if inclined butterflys the steak.

    +1!! I substitute pork fat for bacon fat. BAM!! Instant bacon flavored burger, or meatloaf, or whatever. (I still put bacon strips on top. You can't have too much bacon. )You can't really do it with the lean bacon from the supermarket. You need to go get a box of bacon ends. Lots of fatty pieces there. MMMMMMM....... good stuff.
