How do I determine what "height" rings I need? Ive been looking at burris rings and they are different heights, such as medium, high and extra high.
I'm about to pull the trigger on the burris 2 piece tactical base and the burris rings.
Any help would be great.

Hold the gun and get a good cheekweld. Have someone else hold the scope for you above the receiver until you have perfect eye relief and then measure the height above the receiver. This will let you slam your head into the stock and instantly be able to use the scope. It's nice to have a caliper when measuring.
Then go over to Brownells and look at rings. They list heights.
There are differences in "medium" height rings form brand to brand so you have to measure.

The size of the objective lens matters too. Most 40mm lens will take a med ring to clear the barrel, sometimes lows will work. Burris has a mount/scope/base chart on their website, find one of their scopes that is similar to yours and go from there.
FWIW, mediums worked fine on my son's Remington 700 with a Bushnell Elite 4200 3-9

Anything weaver style in steel. The bases you listed look fine.
NO Leupold STD rings/bases. I've had guns eat those like candy with any sort of heavy scope.

So I have been looking at different glass choices, and I came across a supersniper brand on ebay that seems to have more magnification than the bushnell 3200. Are these SS scope > the bushnell scopes?

Burris bases and signature rings. The plastic inserts a great. No laping, no scratches on you scope and they center themselves. I use a wooden dowl and bought the scope leveler from Natchez.
