    I worked at an egg company in a previous life. Eggs can sit as long as 60 days until they are washed & packed. When they are packed, it is the customer, not the packer whom determines what the expiration date is. Cheap sellers will then put a 90 day expiration on the eggs which may be 60 days old to begin with. Good sellers put 30-45 day expirations on them.

    What has amazed me, is that in major supermarkets in Peru, the eggs are not refrigerated at all. They are stacked in various places around the stores and near the check-out counters. They seem to be there for weeks at a time.

    Only America washes our eggs. Thus, only we require refrigeration.

    The rest of the world practices vaccination for salmonella in their chickens.

    It is a trade off.

    You are very unlikely to get food poisoning from an American egg, but if you do it will be minor.

    From an egg in the rest of the world, you are very, extremely unlikely to get food poisoning from an egg, but if you do, it is going to be very, very bad.

    There is a shortage of eggs, mostly unrelated to Coronavirus. You will see prices rise significantly over the next few weeks...

    The best hard boiled eggs tend to be the ones that are toward the end of their freshness cycle. So if you have some that are at that point. Boil them.
