You don't have to shoot it, just point a shotgun at it to send the pilot a message.

I am more inclined to employ electronic countermeasures.

What about... a high powered laser aimed at the camera to fry out the video components? A) no evidence of what did it, or that it was me, B) it would be funny as hell to watch them try to fly the thing back blind.

They could see it happening on the drone's video feed. It would also take some pretty fancy aiming. Take out the video feed electronically first.

Who fly's that low anyway? When I used to fly, you never saw or heard it.

I mean from a hidden position. Attach 4 or 5 lasers at the end of a stick all pointing in the same direction to give you more area/coverage, setup a scope for aiming and boom (well, no boom, that's the point).

How do you electronically take out the video feed short of some sort of EMP blast?

Thieves and peeping Toms. So...what is the offense for flying it too close to my personal property? If it's a meaningful offense it would be in the owner's best interest to just drop all charges against each other after a takedown.

There are methods of jamming the frequency that's it's using, but doing so is illegal.

That's why you don't 'jam' you just happen to use something on a similar frequency spectrum that just so happens to interfere with other devices in your local radius. If it just so happens to happen as a byproduct of some electronics testing, oops.
