Any paper work for that gift? Or is it just my word that I gifted it to my son? And, until he is 21 with a permit, no conceal carry and no loaded in a car?

No paperwork required between spouses, parent/child, and grandparent/grandchild.

But it is basically your word versus what they police believe as to how the child came into possession. A receipt of some sort may help.
