Of course you should be aware of who's around you. That doesn't stop someone from touching your gun while your back is turned. Are you going to turn around and stand there facing the guy to your rear while you check out? No you're not.

Through clairvoyance, or maybe Google glasses monitoring 360-degree cameras worn on the top of your head?

Any time I carry, OC or CC, my head moves like an owl. In grocery checkout lines? I'll "relax", and lean against the opposing checkout line or the candy rack. If the gun is between me and the rack, I can knock vigilance down a tick and just look like a disinterested guy in the checkout lane.

If someone can touch your OC without you knowing, you're doing something really wrong.

While in uniform with a rentention holster, if people were close by, either my hand or elbow rested on the gun. And I would pivot to face folks I sensed close to me. Nobody was ever behind me while I faced the other direction.
