Shot it, Caught it. Now cook it with pics
We had the harvest thread.
Great job by everyone on deer and trout.
Pics now.
My wife does not eat venison. That's ok, more for me.
She's gone, I pulled out some tenders.
A couple nights ago, I pulled some jerky chunks out, sliced them and prepped for mixing up some spices for the jerky.
I've settled on Jerky Shooter Cajin and mild spices from when I made ground venison jerky ( no more).
Here's what I use.

I marinate for a day or better, run the smoker to 175 for about an hour, drop the temp to between 125 and 140 for about 8 hours and wallla, Good stuff. Small batch as I'm experimenting with the spices mix.

The tenders, well I like to grill them.
I slice them, put a heavy amount of sea salt, onoin / onion spice, and bucu butter.
I sear them for about 5 min, take them off, check the doneness level and nuke them for 30 secs untill I get medium rare.
Baked potatoes and a red wime.
Damn. Gotta shoot another deer.

The last one looks killer.
Do you age it first? I used to hang my deer for 30days. If someone gives me the deer meat,
I'll wet age it for 30 days. Cuts like butter.

I didn't and usually don't age the meat. My buddy does and swears by doing so.
At medium rare to rare, it cuts easily and is so damn good.
I was going to stop at 2 deer but believe I'll be back out after Christmas in 2B looking to fill that last tag.
The tooth picks come out before the jerky is too cool or it's a bitch to get them out. I sometimes have to eat them off. Ha.
I use round toothpicks to twist them to get them out.Opinions are like anal apertures. They all stink but mine.

Walla peeved someone, I forget who it was.
Great looking steaks there. Made my mouth water. I like mine rare. Blood makes a great sauce.Some people just plain suck.
If you're gonna be dumb ya gotta be tough.

This is a great thread and I wish I had been posting meals and meal prep since Archery season. I have some Jerky from the front shoulder of the doe I shot last week marinating in a pot getting ready for the smoker. I fed my daughters venison burger sliders last night. A few days ago it was ground venison in spaghetti sauce and before that it was inner loins. I make what I consider to be an excellent venison heart and vegetables soup that is just really...hearty. I'll try to add some photos as the meals get made. I haven't purchased beef in many years. Venison provides all of the red meat to my family's diet.
