    I actually had someone attempt to take my pistol from my holster. The went to the hospital with various injuries.

    The guy that doesn't have a plan gets his ass handed to him every time. Fortune favors the prepared, if you have some limiting factor say, like a bad left knee, your plan of counter moves won't include a spining kick. Each person has to realistically evaluate their strengths and weaknesses, then develop a counter measure based on those qualities. For each person that will be different.     I would guess, based on how and where my gun sits, a powerful elbow would be the first action. I would hope to disorient the person enough to be able to get my hands on their hand or breakfree and make my next move. That might be a draw or some more strikes. It could also be a "Sorry aunt Cindy but I told you that is not a good idea the last time, after you woke up".

    An important note to those not experienced in actual fighting, don't strike once and admire or examine the result. If it's an elbow or a punch or what have you, jackhammer it. Hit until they obviously diminish their activity.
    Many people throw a punch and stop expecting it to do the trick or see what damage they've done and are quickly on the receiving end of a windmilling attacker.

    The person is not the threat, the pumping heart is not the threat, the hand is the threat. Maybe you can dissuade someone with a strike or a knife, maybe not. But no matter what, you have to deal with the hand. After that, If you decide you want to split your attention and attack separately from controlling the hand, that is your call. I'm going to break the arm. When the guy realizes his face is in blood on concrete, tries to get up and his arm is broken in half, that should kill two birds with one stone most likely. If I can't get a wrist joint lock I won't say Plan B.
