    Default Witch ammo is recommended?

Witch should be preferred for target shooting?
Caliber 380 FMC ammo or ACP ammo.
    What's the difference?
I'd rather have a gun in my hand then a cop on the phone.

.380ACP is the cartridge regardless as to what type of projectile.

FMC is type of projectile - Full Metal Case (similar to Full Metal Jacket, FMJ typically has an exposed lead base though)

Typically FMC/FMJ/LRN is cheaper to shoot. But ballistics may differ from your preferred defensive projectiles(JHP).

I've never heard of witch ammo but they do make zombie ammo.

    Serious reply:

.380 ACP (Automatic Colt Pistol) is the caliber name, not a variety. I prefer brass casings to metal and FMJ is preferred to hollow points for practice because it is cheaper. I have even heard discussions how some people even prefer FMJ (full metal jacket) to JHP (jacketed hollow points) for defense as well because it is more reliable and penetrates better, despite the slower speed.

Seems like your choice is between expansion with a JHP and penetration with FMJ. Hollow points in a smaller caliber may not be as effective as HPs in a large caliber.

I've always carried FMJ, but going to soon get some 380 HPs to test it out on my own.
