Great article! Squirrel has always been one of my favorite things to hunt, and eat.

I agree squirrel is largely over looked IMO because most squirrels people see are dumpster divers or park rats.
I love squirrel meat. I wish there were more of them around here.

Well browned with some onion slices, then smothered & simmered for an hour or so in Sweet Baby Ray's bargeque sauce it's one of the finest meals I've ever eaten.

Most of the folks I know balk at eating squirrel because it is a member of the rat family.

Squirrels belong to a large family of small or medium-sized rodents called the Sciuridae. The family includes tree squirrels, ground squirrels, chipmunks, marmots (including woodchucks), flying squirrels, and prairie dogs. Squirrels are indigenous to the Americas, Eurasia, and Africa and have been introduced to Australia. The earliest known squirrels date from the Eocene and are most closely related to the mountain beaver and to the dormouse among living species.
