Who likes hot wings? I mean really hot wings!
I'll confess! I'm a chili addict. In the summer I generally grow 5 or 6 different types of hot peppers from the mild jalapeno to some of the hottest strains of habaneros.
A few years ago I was searching for a really hot wing recipe and when I couldn't find just the right one I did what any would be chef would do. I made one up.
I'm a big fan of marinades as well. A good marinade with some alcohol in it will penetrate all the way through foods.
With all that in mind I present to you my recipe for really hot yet tasty wings, drumsticks, turkey wings, or similiar.
Utter Fool's Nuclear Wings
Combine all the ingredients except the chicken in a blender, puree well. Put chicken pieces in a 1 gallon ziplock storage bag, pour in contents of blender and refrigerate for at least 24 hours or so (I've left legs in the marinade for 3 days). You may want to place the full bag in a pan or pot because if the ziplock fails your fridge will never be the same.
Remove chicken pieces (with tongs!) to a foil lined baking sheet. Put the marinade in a suitable sauce pan and cook the sauce at a firm boil to reduce it by roughly half, stiring frequently, taste at you own risk!. Bake the wings at 375 for about 30 to 40 minutes, turning once and basting them with the reduced sauce. Bast once and continue cooking 5 to 10 minutes or until the sauce on them thickens and crusts lightly.
Ingredients:
2 cups of red wine (I used Shiraz)
3 whole fresh habanero peppers(less stem)
6 whole fresh jalapeno peppers (less stem)
2 tbsp of ground hot cayenne pepper
4 tbsp of hot chili powder
1 tbsp of salt
1 tbsp of ground black pepper
2 tbsp of garlic powder (or 2-3 cloves of fresh)
1 5oz bottle of Blair's After Death Sauce
1/2 cup balsamic vinegar
The beautiful thing about these wings is that the heat and flavor is present clear through to the bone. Another plus is that habaneros are a slow heat pepper. You get a blast of all the flavors and then the heat will start to climb.
I like to prepare these for Super Bowl parties. It is fun to see heighten testosterone levels goad people into eating things they might not normally eat.
As always please don't touch your eyes at any point in the process. Wear gloves when handling the peppers and maybe even the wings
If you really enjoy them and eat too many then regret it the next time to sit on the throne just remember you were warned
Also remember, milk, sour cream, soft cheeses, bread and such help cool the burn. Beer, water and soda do not.Last edited by CoyoteJack; January 22nd, 2008 at 11:29 PM.

Sounds like my kind of wing. I myself like em' hot. I grown jalapeno, habanero, and hungarian hot wax in the garden. I like to chop the habanero and dehydrate on cheese cloth. Then I GRIND into a powder. Great for making chili. Aks the cook at Buffalo Wild Wings to give you a dipping cup full of HABANERO OIL. Now, that was hot.....

We need to get together and exchange Hot Pepper Shake some time. I grow a variety of hot peppers, ususally around 6 - 8 different types. From Habaneros to two sweet peppers, they get dehydrated and then thrown into a coffee grinder and turned into a fine powder. I have people who come to me each fall looking for a refill from last year. I use it on everything. From eggs in the morning to dinner at night. (Try it in a bag of popcorn) It is hot. VERY HOT. But I love it.

Habaneros have been dethroned twice now in the last year

First by the Dorset Naga and shortly later by the new king Bhut Jolokia.
