If understanding the inner workings and such is your goal with the 1911, I'd reconmend the RIA GI. Its the closest to the 1911-A1 spec, so you could make customizations to it easier than with one already so modified like the Ruger. But thats just my opinion.

Noah_Zark brought up some good points.
No doubt the 1911 is a great pistol (and what I use for personal carry) but there have been quite a few "horror stories" from folks over the years on various forums when it comes to changing out parts with aftermarket stuff. There is a misconception that if you buy parts, you can just start swapping them out on your pistol.
With many firearms this is true, but considering the operational nature of the 1911, the way it locks/unlocks, barrel link and slide fit, etc... this can lead to some serious (and expensive) problems down the road.
Without buying expensive books right off the bat, here is an extensive article on building a 1911 at Brownells, note, they are starting off with a bare frame and slide, but the principles for fitting the parts are the same even if you are starting with a complete pistol.

There are also lots of youtube videos on 1911 work as well....for example in the youtube search, put in "fitting 1911 barrel" you will be busy for hours.

Hey I don't mean to bother you but I was wondering if you could tell me what I need to build a 1911.
I want to have pieces of as many modles as possible. This is going to be a gift for my dad and i know he would want it to be as practical as possible, something unique but not a trophy.
If you could help me out, I'd be really grateful. Thank you for your time

Hey, I tried to send you this yesterday but I don't know if it went through.
I want to build a colt 1911 for my dad with as many parts from different models (so that it can be made up of different parts of history). But I also want the gun to be as practical as possible, not a trophy to hang on the wall.
I know it's a lot to ask of some random kid, but if you could tell me what parts fit that description, I'd be really grateful. Thank you for your time.

That's a lot of work....and probably more expensive than you realize. Building a 1911 isn't rocket science, but if you're really looking at fitting everything yourself, you'll have about $350 in tools alone. Using Colt parts will tend to be expensive and not necessarily better. Mixing and matching may make things more complicated.
The shop manuals are a good place to start, but laid out a bit haphazardly and you can easily supplement with Youtube. Honestly, if you have some mechanical ability, it's not hard, but fitting the slide to the frame and the barrel to the slide can take some time. You can make things a bit easier by using a Kart EZ fit barrel. My first go around took me about 50 hours.

Some slides need the bottom milled down a bit to fit the rails. I use a large sharpening stone for this.
