I know this thread is a year old, and just resurrected.
But FYI, for anyone interested, +1 on asking a local market if they have casings. I know my local Jim Thorpe Market has carried them in the past, and I have seen them elsewhere locally also.
Also, +++1 on the Rytek Kutas Great Sausage Recipes & Meat Curing book. It's like the bible of sausage making, and a great read, besides all the recipes. We have made a lot of his recipes, or used them as guides. Now I just need to get it back from my hunting buddy.
