Sausage Casings nearby?
I'm doing the Atkins diet (done pretty well so far...40+ Lbs down after 8 mo).
Sausage (good sausage) is a bit expensive, so I tried making my own Italian stuff...turned out pretty good, but I have a hand cranked grinder and no casings, so I made it as patties.
I've done it before (and made some good stuff...), but it's been years and I was over near P-burgh at the time, so I don't know where to get sausage casings in the Allentown area (or Carbon Co...I work there).
Anyone know of a possible source?

Thanks for the info. I was hoping to find a local (Allentown area) place...I can get them mail order easily enough...but I usually think about it at the last minute.

I got natural casings from the local grocery store in Bath.
You could also check if your local butcher will sell some to you.

Update..
I tried Mallard Market in Lehighton...got a 12oz salt pack for $7.29....and, after I saw that, I was in Wegmanns getting some misc. stuff to make the sausage and saw they have it for $7.99.
Made 3 batches today...roughly 20 lbs.
Bierwurst (recipe from Rytek Kutas' book).... 7 Parts Pork, 2 Parts Beef, 1 Part Bacon...seasonings. Will be smoked tomorrow. Last time I made it I went too heavy on the salt (been years since I made it though), so I cut back a bit.
Bratwurst and Italian Sausage.

I know Cabelas carries the synthetic type. Haven't tried them yet, but I'm gearing up for some grinding soon.

I use natural casings for my venison sausage. I buy them from Deitrich meats just west of your location. Go west on I-78 to the Krumsville/kutztown exit. At the top of the ramp turn right, red light turn left, he's on the left side of the road. The casings will come packed in salt, I push them on the kitchen sink faucet to wash them out. He also sells the coriander seasoning you need.
