I made this once (oven method). It was pretty good, but I prefer sliced jerkey.

the store hot dogs are emulsified not ground . sausage maker has a way to do it with ice and food p

I only make venison breakfast sausage (uncased) but I have made regular pork and beef hot dogs. Any hot dog recipe can be used with venison but you have to add at least 10% pork fat (or 25% of the fattest pork you can find). Grind them together with a fine die and if you want the dogs homogeneous like commercial dogs partially freeze the grind and pulse a pound at a time in a food processor till it is a goo. You will have to add water while doing this till it looks right.
Always keep the meat under 40 degrees and do not let it get too warm in the food processor (or it won't turn out good).
You'll need to grind through a few times on the smallest blade /plate your grinder has . It will come out the constancy more like salmi or braut than a hotdog though still should be ok it not the same texture ,as has been said real hotdogs are emulsified .
