When I worked at a bike shop ages ago we used to install hand grips with Windex and it never caused an issue.
Another way is to used compressed air and a thin nozzle tip to "float" the grip on.
I preferred the latter since i used to build high-end racing mountain bikes.
Now I never tried it on a gun but i would thing the concept and result would be the same.
Plain old 91% Isopropyl rubbing alcohol works great as a rubber lubricant. That's what was recommended for getting surgical rubber tubing on the Wrist Rocket sling shots , and it works for all rubber things. I use it to get rubber fuel and air lines on barbed fittings , sliding rubber grips on handlebars , even mounting motorcycle tires.
Hand sanitizer works just as well.
Warm it a little?
I know some people use it to put golf club grips on too
