I really like pheasant, and recommend trying it by itself first. You just have to be careful to not overcook it. Brining is good. You should cook the breast to a little over 160°.
I haven't gotten one since I got a sous vide, which would probably be perfect, with a quick pan sear afterwards.
Ms Grip likes it best baked with an apple cream sauce.

Pheasant is the best game bird for eatin' IMHO.
It needs some fat so I usually cover it it bacon before it goes in the oven. :p
Re: Pheasant Hunting-1st Time Luck
So is it gamey or and bad taste? Never had it but looking forward to cooking some up.

They're not usually gamey at all. The breasts are excellent.
I usually skin them instead of plucking. Too much of a PITA. You do need to replace the skin fat so it doesn't dry out. Bacon or olive oil rub does the trick.
Re: Pheasant Hunting-1st Time Luck
I filed dressed and removed the breast and thighs and ran under water to clean them and froze, I hope that was appropriate? There seems to be a membrane over the breast, do I remove it or is it part of it? I may be overthinking here as I have a tendency to do. My buddy helped be breast it out so I am sure there is nothing there that is inedible except the bones.
Re: Pheasant Hunting-1st Time Luck
Congrats!
I've had better luck on pheasant with my vehicles than I've ever had hunting them. ...and purely accidental too.
Gun = 0
Car/truck = 5 (3 of which were still edible)
Re: Pheasant Hunting-1st Time Luck
Congrats! Plenty of recipes on the web for pheasant you should scope out and pick. Haven’t hunted them for years but we used to slow cooker them with a sauce to keep them moist. They can dry out if not careful.

#metoo
I had a '93 Toyota pickup that was the perfect height. If you centered them between the front wheels, DING! the metal bumper would smack them right in the head.
It was also purely accidental every time that happened.

Looked on you tube and get conflicting info. If I hve to dispatch one, breaking the neck and if so how to do so humanely?
