I wouldn't worry about destroyed meat much.. People use 20, 16, and 12ga slugs which are pretty much .58cal and bigger.

Default Re: model 1861 rifle musket used during deer season

a .45 cal round ball has no problems killing a deer cleanly, but good shots are in order, with ranges of 100 yrds or less.

a .58 cal or larger conical will have no problems taking deer sized game.
meat damage will not be all that bad either. even though it is a large caliber projectile it does not have a huge amount of energy to it.
the cool thing about the large cal muzzle stuffers is shoulder bones will not hinder your shots.
a quartering shot through the shoulder, into the chest will:
knock the animal down.
dispatch it very quickly.
not damage much meat.
whats not to love about them?
